‘Unique’ is the result of careful and traditional winemaking. Obtained from Lambrusco di Sorbara grapes, harvested manually in the second or third decade of September, it uses a prolonged cold maceration for 12/24 hours.
This phase enhances its nuances and intensity. After a delicate racking, fermentation takes place in insulated steel tanks at 0C. The secondary fermentation in an autoclave with selected yeasts takes place at a controlled temperature of 15C, and the wine matures on the yeasts for a period ranging from 60 to 120 days.
This method gives ‘Unico’ its distinctive effervescence and an unforgettable palate.
Lambrusco ‘Unico’ originates from the lush estates of Sorbara di Bomporto, located between Modena and Carpi.
Immersed in a flat landscape 30 meters above sea level, these lands extend for a total of about 6 hectares. The emblematic soil of the Emilian plains: a silty and alluvial composition, loose of medium texture, enriched by a wide range of mineral substances.
This peculiar combination of soils gives the wine its unique characteristics, marrying the region’s tradition with the peculiarities of the land.
A true Emilian treasure that encapsulates the history and passion of the area.
