Ciso is a Lambrusco di Sorbara produced with the ancestral method, a technique that reflects the family’s historic art of winemaking.
The grapes, harvested by hand in September, are vinified without the use of chemicals, preserving their naturalness.
The secondary fermentation occurs naturally in the bottle thanks to the lysis of selected yeasts, creating a sediment that testifies to the authenticity of the process.
This process ends with the use of a crown cork, considered ideal for preserving the integrity and bubbles of this historic wine, an authentic link with past methodologies and a celebration of the simplicity and purity of the wine.
The vineyards from which Ciso is born extend over approximately 6 hectares in Sorbara di Bomporto, in the province of Modena, a flat area located 30 meters above sea level.
Here, the clayey, silty and alluvial soil, typical of the Emilian plains, is particularly fertile and rich in minerals, creating the ideal conditions for quality viticulture.
This unique terroir, together with the characteristic climate of the region, significantly influences the characteristics of Lambrusco di Sorbara, giving it those distinctive traits of freshness, acidity and fruity aromas that make it a popular wine inextricably linked to its land of origin.
