Canarein by Cantina Divinja, a dry sparkling Pignoletto Modena DOC, produced following the ancestral method, a historic winemaking technique that allows for natural and spontaneous fermentation in the bottle.
This process enhances the typicality of the Pignoletto grape variety, keeping the purity of the grapes intact.
After manual harvesting, the grapes undergo an initial vinification, the second takes place naturally in the bottle without the addition of exogenous yeasts, followed by a second fermentation.
The sediment that forms in the bottle due to its natural secondary fermentation lasting approximately 5-6 months.
The bottle is crown corked as it is the perfect closure for this type of winemaking.
This maturation period lasts between 8 and 10 months, giving the wine a unique complexity, with a savoury and elegant taste, accompanied by a pleasant bubble.
In the heart of Sorbara di Bomporto, in the province of Modena, are the Canarein vineyards, extending over 6 hectares of flat land, 30 meters above sea level.
The soil, representative of the Emilian plains, is composed of sand, silt and alluvial sediments, providing the vines with essential nutrients and giving them distinctive traits.
This richness of the soil, together with the mild climate and the strategic position between Modena and Carpi, gives the Pignoletto grape unique qualities and a distinctive aromatic profile, rooted in the generosity of this fertile land.
