Winemaking Method

Manual harvest, with cold maceration at a controlled temperature. Soft pressing in the press pneomatica.

Conservation of the must in steel tanks insulated at zero degrees.
Second fermentation in autoclave at controlled temperature (15 ° -17 ° degrees) and stop on selected yeasts for at least 60-90 days.

Land Features

Our farms are located in Sorbara di Bomporto in the province of Modena, between the capital and Carpi.

For a total of about 6 hectares, our farms are located in a flat area 30 meters above sea level.

The type of soil is typical of the Emilia plains with a clayey, silty, alluvial soil, medium-textured, rich
of mineral substances.

Gastronomic combinations

Pignoletto S. Amalia, as a wine with intense flavors and aromas, is very versatile and can be combined with a multitude of dishes.

Being a very fruity and light Pignoletto it is ideal for any Italian-style starter.

It is also remarkable to taste the Pignoletto also with fish dishes, vegetables and eggs.

But the maximum of its potential, it can be obtained together with the typical Tortellini in Brodo.

Description

S. Amalia is a sparkling wine produced in the Modena Hills of Sorbara, combining the unique characteristics of three grape varieties:

Pignoletto, a native vine grown in the Bolognese hills to expand in the areas of Sorbara Modena

Trebbiano, widespread but in the areas of Sorbara, becomes a vigorous, straw yellow vine

Malvasia: a precious vine with an intense and delicate aroma

These three vines, using 100-year-old techniques, are merged into a wine of great elegance, with aromas of flowers and fruit.
